We had a fantastic dinner here at the Folco residence to celebrate the last night of this year!
For a pre-dinner snack, my mother and I ate some bread with a delicious spinach and cream-cheese dip. It was so scrumptuous, you wouldn't even believe it!
For dinner, we had some Dandelion greens (just discovered them), some pork with a peppercorn sauce, slices of bread of course, and my favorite part: stuffed mushrooms!
SPINACH DIP:
This has cream cheese (which makes everything better), whipping cream, spinach, 2 tablespoons of bell pepper, and then just some nice spices to add some more flavor to it. Overall, it was very very good and I thought it could be served at a restaurant as a little hors d'oeuvre. And the bell peppers add just a great amount of zest to it. Delicious! And very light.
PORK AND SAUCE:
Wow... that sounds so midwestern (no offense... in fact I have a lot of family from the midwest), but this flavorful meaty meal tasted very foreign to my mouth. The Pork was cooked normally, but the sauce contained olive oil, butter, 2 shallots (or one small onion), Dry Martini, chicken stock, Dijon Mustard, cream, and peppercorns. In my opinion (and my mom's) there were too many peppercorns in there... too much spice, but the overall idea was really good.

And my favorite part, The STUFFED MUSHROOMS:
Never have I enjoyed these as much as I did tonight. Wow! The top looks like cheese and garlic and whatnot, but when you bite into it, there is so much more: cream cheese. Honestly, I think one should always have cream cheese in the house because it can go in so many different foods! You wouldn't think it would be so amazing, but this recipe just was extraordinary and I give it five stars.
I told my mom that I didn't want to eat my second and last one because then they would all be gone.
